Egg roll




Ingredients:                           


* 10 egg roll wrappers

* 2 cups of green cabbage, 
   shredded and chopped

* 2 cups of shiitake mushrooms,  
   chopped

* 1 3/4 cups of grated carrots


* 1/2 cup green onions, sliced

* 1 tsp olive oil                                          

* 2 garlic cloves, minced                                                            

* 1 tbsp soy sauce

* 1/2 tsp of onion powder

* Salt & pepper, to taste


* Cooking spray


















Method:


1. Preheat the oven to 400 degrees.

2. In the bottom of a large frying pan, add the olive oil and garlic, and place on medium heat.

3. Once the garlic is fragrant, add the cabbage, mushrooms, and carrots to the pan. Stir together for 3 - 5 minutes or until the vegetables begin to soften.

4. Then add in the green onions and saute for another few minutes, and then remove the vegetable mixture from the heat.

5. Spray the bottom of a large baking sheet with the cooking spray.

6. Lay out the egg roll wrapper on the baking sheet, and place two tbsp of the veggie mixture in the center of the wrapper.
